ABOUT

Blackfish is a gracious BYOB owned by Chef Chip Roman. Located on Fayette Street in downtown Conshohocken, PA, the restaurant with its seafood-centric menu of modern American cuisine is the perfect showcase for Chef Roman's inventive interpretations. Guests can enjoy a daily changing a la carte menu, as well as tasting menus ranging from five-to-seven courses. Blackfish opened in 2006 and has since received numerous accolades and praise, including being named "Best Restaurant" in Philadelphia magazine's 2011 "50 Best Restaurants" issue, calling Blackfish "flat-out fantastic…sophisticated without being overbearingly avant-garde, pretty and fresh without being precious…the perfect restaurant of the moment." It has earned a coveted "Three Bells: Excellent" review from The Philadelphia Inquirer's food critic, Craig LaBan, who most recently named Blackfish among the area's top five BYOBs for 2012, noting that "there's a reason the white rooms of this contemporary storefront are perpetually filled with fine-wine-toting Main Line devotees…Chef-owner Chip Roman's BYOB easily remains one of the most sophisticated places in the western burbs to dine, with a focus on seafood that is both refined and inventive."

THE CHEF

Chef Chip Roman is the owner and executive chef at Blackfish, as well as the critically acclaimed Mica (8609 Germantown Avenue), in Chestnut Hill, and the recently opened Ela (627 South 3rd Street) in Philadelphia's Queen's Village neighborhood.

The Philadelphia Inquirer's Craig LaBan has called Chef Roman's food "most impressive…[he] embellishes bistro inspirations with pristine techniques, great ingredients, and personal flourishes that are often surprising," assigning his work at Blackfish a glowing "Three Bells: Excellent" review. In a 2012 re-review, Philadelphia magazine's Trey Popp gushed that "the first time I ate at Blackfish, in 2007, I sat next to a stack of cookbooks from Alice Waters and Charlie Trotter that were the splashiest decorations there. Those authors, it was clear, registered to me as Roman's heroes. Four and a half years later, they seem more like his colleagues…Dinner now is better than it was then."

In addition to his three restaurants, Chef Roman is the owner and proprietor of Charles Roman Catering.
